2018 Cornas Racking
In order to preserve the freshness of the aromas and limit sulfur intake, we make sure to keep our wines “clean”. In early spring, before the cellar warms up and the micro-organisms wake up, we rack the wines that were put in barrels last fall.
This technique clarifies the wine and eliminates particles that have settled to the bottom of the barrel during the winter (called sedimentation). We delicately remove the liquid located above the deposit (called the lees). We clean the barrels with high pressure and then with steam, before returning the clear wine.
We take this opportunity to taste the wine for the first time and make our verdict:
2018 promises to be definitively: A Great Vintage of Cornas !!!!
